Ingredients
  

Egg Mixture
  • 8 large eggs
  • 1/2 cup milk whole or 2%
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Vegetables and Cheese
  • 1 cup spinach fresh, chopped
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 cup cheddar cheese shredded

Method
 

Prepare the Egg Mixture
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Cook the Vegetables
  1. In a skillet over medium heat, sauté the onion and bell pepper until softened, about 5 minutes.
  2. Add the spinach and cook until wilted, about 2 minutes.
Combine and Bake
  1. Pour the egg mixture over the sautéed vegetables in the skillet.
  2. Sprinkle the shredded cheddar cheese on top.
  3. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is golden.
Serve
  1. Remove from the oven, let cool slightly, then slice and serve warm.
