  • 4 cups cold cooked rice
  • 2 tbsp vegetable oil
  • 3 cloves fresh garlic minced
  • 1 medium onion diced
  • 1 cup mixed vegetables peas, carrots, corn
  • 3 tbsp soy sauce low sodium preferred
  • 2 large eggs or tofu for a vegetarian option

Method
 

  1. Prepare your ingredients: Dice the onion and mince the garlic.
  2. Heat a large skillet or wok over medium-high heat with vegetable oil until shimmering.
  3. Sauté minced garlic and diced onion for about 2 minutes until fragrant.
  4. Add mixed vegetables and stir-fry for about 3 minutes until tender but still colorful.
  5. Break apart the cold cooked rice and add it to the pan, stirring in soy sauce to evenly coat.
  6. Create a space in the center of the pan, crack in the eggs, scramble them until fully cooked, then mix with the rice.
