  • 4 ripe peaches about 4 cups sliced
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter cold, cut into cubes
  • 1/4 cup granulated sugar divided
  • 1/4 tsp salt
  • 3-4 tbsp ice water
  • 1 egg for egg wash, optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix flour, 2 tbsp sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water until the dough holds together; chill for 30 minutes.
  4. Slice peaches into wedges and toss with remaining sugar and a pinch of salt.
  5. Roll out chilled dough into a rough circle on a floured surface.
  6. Transfer to a parchment-lined baking sheet; arrange peach slices in the center and fold edges over the fruit.
  7. Brush edges with egg wash if desired; bake for 35-40 minutes until golden brown.
