  • 1 lb lean ground beef
  • 2 cups sweet onions sliced
  • 1 cup long-grain rice uncooked
  • 2 cups low-sodium beef broth
  • 1 ½ cups shredded Gruyère or Swiss cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare a large baking dish with nonstick spray.
  2. In a skillet over medium heat, melt butter and sauté sliced onions until golden brown (15-20 minutes).
  3. Push onions aside; add ground beef, cooking until browned (5-7 minutes). Season with salt and pepper.
  4. Stir in rice and beef broth until combined; pour mixture into the baking dish and top with shredded cheese.
  5. Cover with aluminum foil and bake for 25 minutes; remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden.
  6. Let cool slightly before serving.
