Ingredients
  

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1 cup whole milk or almond/oat milk
  • 2 large eggs
  • 2 tbsp melted butter or coconut oil

Method
 

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. In another bowl, mix milk, eggs, and melted butter until smooth.
  3. Pour wet ingredients into dry ingredients; stir gently until combined (lumps are okay).
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour about half a cup of batter onto the skillet; cook until bubbles form on top (about 2 minutes). Flip and cook until golden brown on both sides.
  6. Serve immediately with your favorite toppings.
