Step-by-Step Instructions
  1. Boil the Potatoes with Baking Soda: Place unpeeled baby Yukon Gold potatoes in a large pot and cover with cold water by at least 1 inch. Add 1 tablespoon kosher salt and 1/2 teaspoon baking soda (alkaline water breaks down surface pectin to form a starchy mash layer that crisps like glass in the oven). Bring to a rolling boil over high heat, then reduce to medium-high and simmer for 15 to 18 minutes until a fork easily pierces through the center.
  2. Drain and Steam Dry: Drain the potatoes thoroughly in a colander and let them sit in the hot pot off the heat for 5 minutes. Steam drying removes surface moisture, which is crucial for achieving shattering crispness rather than soggy steamed potatoes.
