Enchilada Taquito Casserole

Ingredients
  

  • 12 pieces taquitos (beef or chicken)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream (for topping)
  • 1/4 cup chopped cilantro (for garnish)
  • 1/2 cup sliced olives (optional)

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Spread half of the enchilada sauce on the bottom of a baking dish.
  3. Arrange the taquitos in a single layer over the sauce.
  4. Pour the remaining enchilada sauce over the taquitos.
  5. Sprinkle the shredded cheese evenly on top.
  6. Cover the baking dish with aluminum foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Top with sour cream, chopped cilantro, and sliced olives if desired.
  10. Cut into squares and serve warm.
