Ingredients

  • For the Corn
  • 4 ears corn on the cob (husked)
  • For the Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon lime juice (freshly squeezed)
  • 1 teaspoon chili powder (adjust to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • For the Toppings
  • 1/2 cup cotija cheese (crumbled)
  • 2 tablespoons cilantro (chopped)
  • 1 teaspoon lime zest

Method

  1. Preheat your grill to medium-high heat.
  2. Place 4 husked ears of corn directly on the grill.
  3. Cook for about 10-15 minutes, turning occasionally until the corn is beautifully charred and tender to your liking.
  4. In a mixing bowl, combine 1/2 cup mayonnaise, 1/4 cup sour cream, 1 teaspoon freshly squeezed lime juice, 1 teaspoon chili powder, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt.
  5. Stir until smooth and creamy.
  6. Once the corn is grilled to perfection, remove it from the grill.
  7. Generously brush your creamy sauce over each ear of corn for that rich flavor.
  8. Finally, sprinkle 1/2 cup crumbled cotija cheese, 2 tablespoons chopped cilantro, and zest from 1 teaspoon of lime on top before serving.
