Ingredients
  

  • 6 cups salad greens roughly chopped
  • 1 lb ground turkey
  • 3 tbsp taco seasoning
  • 1 cup black beans
  • 2 cups rice cooked
  • 1/2 lime lime juice
  • 2-3 tbsp cilantro chopped
  • 2 cups cherry tomatoes quartered
  • 1 whole avocado sliced
  • 1 cup Monterey jack or cheddar cheese shredded
  • Greek yogurt taco sauce to taste

Method
 

  1. Heat a large non-stick skillet on medium heat and brown ground turkey for about 10-12 minutes. Halfway through cooking, add 3 tbsp of taco seasoning and combine well. When ground turkey is completely browned, remove from heat and set aside.
  2. Combine rice, 1/4-1/2 lime juiced, 1-3 tbsp of chopped cilantro, a pinch of salt, and a pinch of black pepper to make cilantro lime rice.
  3. In each serving bowl, add greens, 4 oz of cooked ground turkey, 1/2 cup of cilantro lime rice, 1/4 sliced avocado, 1/4 cup black beans, 1/4 cup shredded cheese, and 1/2 cup quartered cherry tomatoes.
  4. Top each bowl with Greek yogurt taco sauce, salsa, sour cream, or your favorite creamy ranch dressing. Combine well and enjoy, topping with additional cilantro and lime juice to taste.
