Ingredients
  

  • 4 medium-sized bell peppers red, yellow, or green
  • 1 lb ground beef or turkey or plant-based alternative
  • 1 cup cooked rice white or brown
  • 1 medium onion chopped
  • 1 can 14.5 oz diced tomatoes
  • salt
  • pepper
  • garlic powder

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds; set them upright in a baking dish.
  3. In a skillet over medium heat, sauté the chopped onion until translucent. Add the ground meat and cook until browned. Mix in cooked rice and diced tomatoes.
  4. Season the mixture with salt, pepper, garlic powder, and any additional spices.
  5. Fill each bell pepper generously with the meat mixture.
  6. Cover with foil and bake for about 30 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
