Ingredients
  

  • 4 ripe peaches sliced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a small saucepan over medium heat, melt brown sugar and butter until bubbly. Pour this mixture into the prepared pan and arrange peach slices on top.
  3. In a mixing bowl, beat granulated sugar with softened butter until fluffy. Add eggs and vanilla; mix well.
  4. In another bowl, whisk together flour and baking powder. Gradually add this dry mixture to the wet ingredients until fully combined.
  5. Pour batter over peaches in the pan and spread evenly. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
  6. Allow to cool slightly before inverting onto a serving plate.
