Ingredients
  

  • 2 ripe peaches
  • 1 small red onion
  • 1 jalapeño pepper
  • ¼ cup fresh cilantro
  • Juice of 1 lime

Method
 

  1. Wash all produce thoroughly. Dice the peaches into small cubes and place in a mixing bowl.
  2. Finely chop the red onion and jalapeño (using gloves if sensitive to spice).
  3. Add the chopped onion and jalapeño to the bowl with the peaches; stir gently.
  4. Chop the fresh cilantro and add it along with freshly squeezed lime juice; mix well.
  5. Taste and adjust seasoning if necessary with more lime juice or salt.
  6. Chill in the refrigerator for at least an hour before serving.
