Ingredients
  

Crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
Filling
  • 1 cup rhubarb chopped
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder

Method
 

Prepare the crust
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly.
  2. Press the mixture into the bottom of a greased 9x9 inch baking pan.
  3. Bake for 15 minutes or until lightly golden.
Make the filling
  1. In a separate bowl, whisk together the sugar, eggs, lemon juice, lemon zest, flour, and baking powder until smooth.
  2. Fold in the chopped rhubarb.
Bake the bars
  1. Pour the filling over the pre-baked crust and spread evenly.
  2. Bake for an additional 20 minutes, or until the filling is set and lightly browned.
  3. Allow to cool before cutting into squares.
