Ingredients
  

  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce store-bought or homemade
  • 1 medium onion diced
  • 2 cloves garlic minced
  • Optional toppings: sour cream sliced jalapeños

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef and onions for about 7-10 minutes. Drain excess fat.
  3. Stir in minced garlic and half of the enchilada sauce; cook for another 2 minutes.
  4. Spoon the beef mixture onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce over rolled tortillas and top with extra cheese.
  6. Bake for 20-25 minutes until bubbly and golden brown.
