- Preheat oven to 350°F (175°C) and lightly grease a baking dish.
- In a skillet over medium heat, brown the ground beef and onions for about 7-10 minutes. Drain excess fat.
- Stir in minced garlic and half of the enchilada sauce; cook for another 2 minutes.
- Spoon the beef mixture onto each tortilla, sprinkle with cheese, roll tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce over rolled tortillas and top with extra cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
