Ingredients
  

  • 2 cans refrigerated cinnamon rolls
  • 4 large eggs
  • 1 cup whole milk or almond/oat milk
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar mixed with 2 teaspoons ground cinnamon
  • 1 cup powdered sugar for glaze

Method
 

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cut each cinnamon roll into quarters and evenly distribute them in the prepared baking dish.
  3. In a bowl, whisk together eggs, milk, vanilla extract, and half of the cinnamon-sugar mixture until well combined.
  4. Pour the egg mixture over the cinnamon rolls and sprinkle with the remaining cinnamon-sugar mix.
  5. Bake for 25-30 minutes or until golden brown and set in the center.
  6. While baking, mix powdered sugar with milk to create a smooth glaze. Drizzle over the casserole once out of the oven.
