Ingredients

  • 2 small sweet potatoes (diced)
  • 2 carrots (sliced)
  • 12 oz chicken apple sausages
  • 2 cups broccoli (bite-size)
  • 2 bell peppers (sliced)
  • 1 red onion (large slices)
  • 1 tsp coarse sea salt
  • 1 tsp black pepper
  • 3 tbsp olive oil
  • 3 tbsp Dijon mustard
  • 2 tbsp maple syrup
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

Method

  1. Preheat oven to 400°F.
  2. CHOP carrots and potatoes first into a small pieces (1/2”). Add to prepared sheet pan (by prepared I mean put on a sheet of parchment paper) and drizzle veggies with olive oil, salt & black pepper.
  3. Place in oven for 10 minutes.
  4. CHOP sausages, peppers, broccoli and onion. Broccoli and onion can be slightly larger because they cook more quickly. Place in a large mixing bowl.
  5. COMBINE ingredients needed for Maple Dijon sauce in a small bowl
  6. REMOVE pan from oven and add carrots and potatoes to large bowl with all vegetables and sausage. Add sauce, salt and pepper to large bowl and toss so everything is coated. Pour mixture onto the sheet pan into an even layer.
  7. Bake for 25 minutes or until potatoes and carrots are fork tender.

Notes

The use of smoked paprika in this dish adds a depth of flavor that elevates the entire meal. The smoky, sweet notes not only complement the sweetness of the apple sausage but also enhance the natural flavors of the roasted vegetables, creating a harmonious balance that keeps each bite interesting.
