Ingredients
  

  • 1 cup freshly grated carrots
  • 1 cup graham cracker crumbs
  • 1 cup powdered sugar
  • 4 oz softened cream cheese
  • 1 tsp ground cinnamon
  • ½ cup chopped walnuts optional
  • 8 oz white chocolate for coating

Method
 

  1. Finely grate fresh carrots until you have about one cup.
  2. In a large bowl, mix graham cracker crumbs, powdered sugar, ground cinnamon, and chopped walnuts (if using).
  3. Add softened cream cheese to the dry mixture and blend until a sticky dough forms.
  4. Roll the mixture into one-inch balls and place them on a parchment-lined baking sheet.
  5. Melt the white chocolate until smooth; dip each carrot ball in it until fully coated and return to the baking sheet.
  6. Chill in the refrigerator for at least one hour or until set.
