  • 4 large bell peppers any color
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice white or brown
  • 1 can 14.5 oz diced tomatoes (low-sodium)
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Wash the bell peppers, slice off the tops, and remove seeds.

  6. Place stuffed peppers upright in the baking dish, cover with foil, and bake for 30 minutes. Remove foil for the last 10 minutes for slight browning.
