Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a microwave-safe bowl, combine chocolate chips and butter. Heat in 30-second intervals until melted and smooth.
  3. Stir granulated sugar and brown sugar into the melted mixture until combined. Add eggs one at a time, mixing well after each addition, then add vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and shredded coconut. Gradually fold this dry mixture into your wet ingredients until just combined.
  5. Use a cookie scoop or tablespoon to drop spoonfuls onto your prepared baking sheets, gently pressing down in the center to create nest shapes.
  6. Bake for about 12-15 minutes or until edges are lightly golden. Let cool completely before decorating.
