Ingredients
  

  • 1 15-oz can garbanzo beans drained and rinsed
  • 4 Tbsp unsweetened cocoa powder
  • cup creamy natural peanut butter
  • cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 ¼ tsp baking powder
  • ½ tsp sea salt
  • cup chocolate chips

Method
 

  1. Preheat the oven to 350 degrees F and line a baking tray with parchment paper.
  2. Drain the can of garbanzo beans into a colander and rinse them under water. Shake the strainer to remove excess water.
  3. Transfer the garbanzo beans to a food processor with the other ingredients, except for the chocolate chips.
  4. Blend until a thick dough forms and all chickpeas are blended smoothly, stopping occasionally to scrape the sides.
  5. Mix in the chocolate chips until evenly distributed.
  6. Shape the dough into discs and place them on the prepared baking sheet. Press additional chocolate chips into the dough if desired.
  7. Bake on the center rack for 9 to 12 minutes or until the cookies are firm.
  8. Allow cookies to cool completely before moving them to prevent them from falling apart.
