- Preheat the oven to 350 degrees F and line a baking tray with parchment paper.
- Drain the can of garbanzo beans into a colander and rinse them under water. Shake the strainer to remove excess water.
- Transfer the garbanzo beans to a food processor with the other ingredients, except for the chocolate chips.
- Blend until a thick dough forms and all chickpeas are blended smoothly, stopping occasionally to scrape the sides.
- Mix in the chocolate chips until evenly distributed.
- Shape the dough into discs and place them on the prepared baking sheet. Press additional chocolate chips into the dough if desired.
- Bake on the center rack for 9 to 12 minutes or until the cookies are firm.
- Allow cookies to cool completely before moving them to prevent them from falling apart.
