Ingredients
  

Choux Pastry
  • 1 cup water
  • 1/2 cup unsalted butter cut into pieces
  • 1 cup all-purpose flour sifted
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 4 large eggs
Hazelnut Cream Filling
  • 1 cup heavy cream chilled
  • 1/2 cup hazelnut paste
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
Topping
  • 1/4 cup chopped hazelnuts for garnish
  • 1 tablespoon powdered sugar for dusting

Method
 

Make the Choux Pastry
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.
  3. Remove from heat and stir in flour until the mixture forms a ball.
  4. Let cool slightly, then add eggs one at a time, mixing well after each addition.
  5. Transfer the dough to a piping bag and pipe a large ring onto the prepared baking sheet.
  6. Bake for 25 minutes or until golden brown and puffed. Let cool completely.
Prepare the Hazelnut Cream Filling
  1. In a mixing bowl, whip the heavy cream until soft peaks form.
  2. Gently fold in hazelnut paste, powdered sugar, and vanilla extract until well combined.
Assemble the Paris-Brest
  1. Cut the choux pastry ring in half horizontally.
  2. Fill the bottom half with the hazelnut cream filling using a piping bag.
  3. Replace the top half and garnish with chopped hazelnuts and a dusting of powdered sugar.
