Ingredients
  

  • 2 large ripe bananas
  • 1 cup dark chocolate chips semi-sweet or bittersweet
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • 2 large eggs room temperature
  • cup vegetable oil or melted butter
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease lightly.
  2. In a bowl, mash the ripe bananas until smooth.
  3. Add eggs, vegetable oil, and vanilla extract to the mashed bananas; mix well.
  4. In another bowl, whisk together flour, sugar, and baking soda. Gradually fold this into the wet ingredients until just combined.
  5. Gently fold in dark chocolate chips.
  6. Fill muffin cups about three-quarters full and bake for 18-20 minutes or until a toothpick inserted comes out clean.
