Ingredients
  

  • 2 cups cucumbers sliced
  • 1 cup sweet bell peppers red, yellow, orange, chopped
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Method
 

  1. Slice cucumbers into half-moons about 1/4 inch thick. Chop sweet bell peppers into bite-sized pieces.
  2. Thinly slice red onion; soak in cold water for 10 minutes if desired to mellow flavor.
  3. Rinse and chop parsley finely.
  4. In a large bowl, combine cucumbers, bell peppers, onion, and parsley; toss gently.
  5. In a small bowl or jar, whisk together lemon juice and olive oil; drizzle over salad while tossing gently.
  6. Season with salt and pepper to taste before serving.
