Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 2 cups green salsa salsa verde
  • 4 cups low-sodium chicken broth
  • 2 cans 15 oz each canned hominy, drained and rinsed
  • 1 cup fresh cilantro chopped (reserve some for garnish)
  • Salt and pepper to taste
  • Optional: 1 tsp chili powder for added heat

Method
 

  1. Place the chicken thighs at the bottom of the crockpot.
  2. Pour the green salsa over the chicken followed by the chicken broth.
  3. Add the drained hominy and half of the chopped cilantro.
  4. Season with salt, pepper, and optional chili powder. Stir gently to combine.
  5. Cover and cook on low for 6 hours or high for 3 hours until chicken is tender.
  6. Shred the chicken in the pot using two forks. Serve hot with garnishes of cilantro, sliced radishes, and lime wedges.
