Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 medium carrots sliced
  • 3 stalks celery chopped
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 8 cups low-sodium chicken broth
  • 2 cups egg noodles
  • 1/4 cup fresh parsley chopped

Method
 

  1. Chop carrots, celery, onion, and mince garlic.
  2. Place chicken breasts at the bottom of the crockpot; layer vegetables and garlic on top.
  3. Pour in chicken broth until ingredients are covered; season with salt and pepper to taste.
  4. Set crockpot to low for 6 hours or high for 4 hours.
  5. About 30 minutes before serving, stir in egg noodles until tender.
  6. Shred the chicken in the pot using two forks; stir in fresh parsley and serve hot.
