Ingredients
  

Beef
  • 3 pounds chuck roast trimmed and cut into large chunks
Spices and Seasonings
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 cloves garlic minced
  • 2 tablespoons chipotle peppers in adobo sauce minced
Liquids
  • 1 cup beef broth
  • 1 juice lime freshly squeezed

Method
 

Prepare the Beef
  1. Season the chuck roast with salt, black pepper, cumin, oregano, and smoked paprika.
  2. In a large skillet, sear the beef chunks on all sides over medium-high heat until browned.
Combine Ingredients
  1. Place the seared beef in the crockpot.
  2. Add minced garlic, chipotle peppers, beef broth, and lime juice to the crockpot.
Cook
  1. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
Shred and Serve
  1. Remove the beef from the crockpot and shred it with two forks.
  2. Return the shredded beef to the crockpot and stir to combine with the juices.
  3. Serve in tacos, burritos, or over rice.
