Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1 14.5 oz can fire-roasted diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 oz uncooked lasagna noodles or pasta shells
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese

Method
 

  1. Sauté ground beef in a skillet over medium heat until browned. Add chopped onion and minced garlic; cook until fragrant.
  2. Transfer beef mixture to the crock pot. Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. In a bowl, mix ricotta cheese with herbs and set aside.
  5. About 30 minutes before serving, add uncooked pasta to the soup; cover and cook until tender.
  6. Serve hot in bowls topped with dollops of ricotta mixture and shredded mozzarella.
