  • 0.25 cup fresh mint 20 g
Mushrooms
  • 9 oz king oyster mushrooms 250 g
  • 6 oz shimeji mushrooms 170 g
Peanut Sauce
  • 1.5 tbsp peanut butter 24 g
  • 1 tbsp fresh ginger 9 g
  • 1 clove garlic
  • 2 tbsp lime juice 30 ml
  • 0.25 cup dairy-free milk 60 ml
  • 0.5 tbsp maple syrup 8 ml
  • 2 tsp tamari 10 ml
  • 1 tsp rice vinegar 5 ml
  • 1 tsp sesame oil 5 ml
  • 0.5 tbsp gochujang paste 8 g
  • 1 tsp gochujang paste 4 g
  • 2 tsp maple syrup 10 ml

Equipment

  • Oven
  • Large baking tray
  • Large Pan
  • Small blender
  • Lidded container

Method

Baking the Rice
  1. Preheat the oven to 400°F (200°C) fan-forced. To a large baking tray lined with baking paper, combine the cooked rice and chili oil. Spread into a thin layer. Bake for 30 minutes on the middle rack, stirring halfway. Once cooled, crush the rice to avoid large clumps.
Preparing the Mushrooms
  1. Separate the caps and stems of the king oyster mushrooms. Slice the caps and shred the stems. Chop the base of the shimeji mushrooms.
  2. In a large lidded container, combine ½ tbsp gochujang, 2 tsp tamari, ½ tbsp maple syrup, and 1 tsp rice vinegar, stirring to form a paste. Add the mushrooms, close the lid, and shake to coat evenly.
  3. In a large pan over medium heat, cook the mushrooms for about 10 minutes until they release juices. Once dry, add the sesame oil, stir, and cook for 2 minutes without stirring. Stir again and leave undisturbed for another 2 minutes.
Making the Peanut Sauce
  1. In a small blender, blend peanut butter, ginger, garlic, lime juice, tamari, maple syrup, dairy-free milk, and gochujang until smooth, or mince ginger and garlic and whisk with the other ingredients.
Assembling the Salad
  1. In two bowls, divide the edamame, cucumber, spring onion, avocado, mint, mushrooms, and crispy rice. Cover with peanut sauce and enjoy!
