Ingredients
  

  • 1 lb large shrimp peeled and deveined
  • 1 cup sweetened or unsweetened coconut flakes
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Oil for frying vegetable or coconut

Method
 

  1. Heat about an inch of oil in a deep skillet over medium heat until it reaches 350°F (175°C).
  2. Pat shrimp dry and season lightly with salt and pepper.
  3. Set up a breading station: one bowl with flour, one with beaten eggs, and one with coconut flakes.
  4. Dredge each shrimp in flour, dip into eggs, then coat thoroughly in coconut flakes.
  5. Fry shrimp in hot oil until golden brown, about 2-3 minutes per side. Avoid overcrowding the pan.
  6. Drain on paper towels and serve immediately with dipping sauce.
