Ingredients
  

Burrito Filling
  • 8 slices Bacon Crisped
  • 4 large Eggs Beaten
  • 1 cup Cheddar Cheese Shredded
  • 2 cups Potatoes Diced and cooked
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 4 large Flour Tortillas

Method
 

Prepare the Potatoes
  1. Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10 minutes. Drain and set aside.
Cook the Bacon
  1. In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, then crumble into pieces.
Scramble the Eggs
  1. In the same skillet, drain excess bacon fat, leaving about 1 tablespoon. Add the beaten eggs, salt, and pepper. Scramble until fully cooked.
Assemble the Burritos
  1. On each tortilla, layer the cooked potatoes, scrambled eggs, crumbled bacon, and shredded cheese. Roll tightly to form a burrito.
Cook the Burritos
  1. Return the burritos to the skillet seam side down. Cook over medium heat until golden brown and crispy, about 2-3 minutes per side.
