Prepare the Cookie Dough
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Bake the Cookies
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Make the Cream Frosting
- In a mixing bowl, whip the chilled heavy cream until soft peaks form.
- Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Divide the frosting into separate bowls and add food coloring to each to create different colors.
Decorate the Cookies
- Spread or pipe the colored cream frosting onto the cooled cookies.
- Sprinkle with rainbow sprinkles and edible glitter for a magical finish.
