Ingredients
  

Salad Base
  • 3-4 cups fresh baby spinach
  • 1 medium honey crisp apple thinly sliced or chopped
  • ¼-⅓ cup dried cranberries
  • ½ cup crumbled feta
  • 3 TBSP chopped candied pecans
Dressing
  • ¼ cup extra virgin olive oil
  • 3 TBSP red wine vinegar
  • 1 TBSP pure maple syrup
  • 1 tsp dijon mustard
  • ¼ tsp sea salt
  • tsp black pepper

Method
 

Prepare the Dressing
  1. Combine dressing ingredients in a mason jar and shake well or whisk together in a bowl until emulsified.
Prepare the Salad
  1. Thinly slice or chop the apple into bite-sized pieces.
  2. Add spinach to a large bowl and add half the dressing, mixing well to coat.
  3. Add apples, feta, dried cranberries, and candied pecans to the bowl.
  4. Toss to combine, adding extra of any ingredient or seasoning with salt and pepper to taste.
  5. Serve with remaining dressing and enjoy immediately.
