Ingredients
  

  • 1 lb lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups frozen mixed vegetables
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded sharp cheddar cheese
  • 2 cups crushed potato chips or tater tots

Method
 

  1. Preheat oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef with chopped onion and minced garlic until fully cooked. Drain excess fat.
  3. Stir in frozen mixed vegetables and cook until heated through.
  4. Add cream of mushroom soup, mixing well. Season with salt and pepper to taste.
  5. Transfer mixture to the baking dish, topping with shredded cheddar cheese and either crushed potato chips or tater tots.
  6. Bake for 30 minutes or until the top is golden brown and bubbly.
