Ingredients
  

Wet Ingredients
  • 1 cup cottage cheese preferably low-fat
  • 2 large eggs
  • 1 cup milk any type
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar optional

Method
 

Prepare the Batter
  1. In a mixing bowl, combine the cottage cheese, eggs, milk, and vanilla extract. Whisk until smooth.
  2. In another bowl, mix together the flour, baking powder, salt, and sugar.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Cook the Waffles
  1. Preheat the waffle iron according to the manufacturer's instructions.
  2. Pour the batter into the preheated waffle iron, using enough to cover the surface without overflowing.
  3. Cook until the waffles are golden brown and crisp, about 5 minutes.
  4. Remove the waffles and repeat with the remaining batter.
Serve
  1. Serve the waffles warm with maple syrup and fresh fruit, if desired.
