  • 1 lb fresh white fish fillets tilapia or catfish
  • 1 cup medium-grind cornmeal
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying about 2 cups

Method
 

  1. Prepare your workspace by gathering ingredients and heating oil in a frying pan over medium-high heat (350°F).
  2. Pat fish fillets dry with paper towels and season both sides with salt and pepper.
  3. Set up a breading station: one bowl with flour mixed with a pinch of salt, one bowl with beaten eggs, and one bowl with cornmeal.
  4. Dredge each fillet first in flour, then dip in egg, and finally coat in cornmeal until well covered.
