  • 2 cups corn kernels fresh or canned
  • 1 large ripe avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • 1 teaspoon olive oil optional
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. In a large mixing bowl, combine corn kernels, diced avocado, halved cherry tomatoes, chopped red onion, and cilantro.
  2. Drizzle with lime juice and olive oil, then season with salt and black pepper to taste.
  3. Gently toss the salad to combine all ingredients without mashing the avocado.
  4. Serve immediately or refrigerate for up to 30 minutes before serving.

Notes
