Ingredients
  

Pasta
  • 8 oz spaghetti cooked and cooled
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup black olives sliced
Dressing
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic minced
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
Herbs
  • 1/4 cup fresh basil chopped
  • 1/4 cup parsley chopped

Method
 

Prepare the Spaghetti
  1. Cook the spaghetti according to package instructions. Drain and rinse under cold water to cool.
Mix the Vegetables
  1. In a large mixing bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and black olives.
Make the Dressing
  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
Combine Ingredients
  1. Add the cooled spaghetti to the bowl of vegetables. Pour the dressing over the top and toss to combine.
Add Herbs and Serve
  1. Fold in the chopped basil and parsley. Serve chilled or at room temperature.
