Ingredients
  

Base Ingredients
  • 2 cans full-fat coconut milk Chilled
  • 3/4 cup granulated sugar Adjust to taste
  • 1 tbsp vanilla extract
  • 1/4 tsp salt
Optional Mix-ins
  • 1/2 cup shredded coconut Toasted if desired
  • 1/2 cup chocolate chips Dairy-free if needed

Method
 

Prepare the Mixture
  1. In a mixing bowl, whisk together the chilled coconut milk, sugar, vanilla extract, and salt until well combined.
  2. Taste the mixture and adjust sweetness if necessary.
Chill the Mixture
  1. Cover the bowl and refrigerate the mixture for at least 2 hours or until completely chilled.
Churn the Ice Cream
  1. Pour the chilled mixture into the ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
Add Mix-ins and Freeze
  1. If using, add the shredded coconut and chocolate chips during the last few minutes of churning.
  2. Transfer the ice cream to an airtight container and freeze for at least 2 hours to firm up.
Serve
  1. Scoop the ice cream into bowls and enjoy!
