Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup fresh lime juice from about 4 limes
  • 1 cup full-fat coconut milk
  • 4 garlic cloves minced
  • 2 tbsp honey
  • Salt and pepper to taste

Method
 

  1. Marinate the chicken in a large bowl or zip-top bag with lime juice, coconut milk, garlic, and honey. Seal and refrigerate for at least 1 hour (preferably overnight).
  2. Preheat grill to medium-high heat (375°F/190°C) and clean the grates.
  3. Remove chicken from marinade, pat dry with paper towels, and season generously with salt and pepper.
  4. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for 5 minutes before slicing.
  6. Serve sliced chicken drizzled with any remaining marinade if desired.
