Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 1 can 13.5 oz full-fat coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon fresh ginger minced
  • 3 cloves garlic minced
  • 1 cup bell peppers sliced, mixed colors
  • 1 medium onion chopped
  • 2 tablespoons lime juice

Method
 

  1. Prepare your ingredients by chopping the onion, slicing bell peppers, and mincing garlic and ginger.
  2. In a large skillet over medium heat, add a splash of oil. Sauté onions, garlic, and ginger until fragrant, about 2 minutes.
  3. Add the sliced bell peppers and cook for another 3 minutes until tender.
  4. Stir in coconut milk, curry powder, and lime juice; let simmer for 5 minutes to meld flavors.
  5. Add shrimp to the sauce and cook until pink and opaque, about 3–5 minutes depending on size.
  6. Serve hot over rice or noodles, drizzled with extra sauce.
