Ingredients
  

  • 1 lb boneless chicken thighs
  • 1 can 13.5 oz full-fat coconut milk
  • 2 tbsp yellow curry powder
  • 1 inch fresh ginger minced
  • 4 cloves garlic minced
  • 2 tbsp vegetable oil
  • ¼ cup fresh cilantro chopped (for garnish)

Method
 

  1. Heat vegetable oil in a large skillet over medium heat. Add minced garlic and ginger; sauté until fragrant (about 1 minute).
  2. Add chicken thighs and cook until golden brown on all sides (approximately 5 minutes).
  3. Sprinkle in yellow curry powder and stir well, cooking for another minute.
  4. Gradually pour in coconut milk while stirring; bring to a gentle simmer and cook for about 20 minutes until chicken is fully cooked.
  5. Taste and adjust seasoning if necessary.
  6. Serve warm, garnished with fresh cilantro alongside rice or naan.
