Egg Mixture
  • 8 large eggs fresh
  • 1/4 cup milk whole or 2%
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground

  • 2 tablespoons butter unsalted

Method
 

Prepare the Egg Mixture
  1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Cook the Eggs
  1. Heat a non-stick skillet over medium-low heat and add the butter.
  2. Once the butter is melted and bubbling, pour in the egg mixture.
  3. Let the eggs sit for a few moments until they start to set around the edges.
  4. Gently stir the eggs with a spatula, pushing them from the edges towards the center.
  5. Continue cooking and stirring until the eggs are softly set and slightly runny in places.
  6. Remove from heat and let carryover cooking finish the eggs.
