Ingredients
  

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 cup chopped celery
  • 1 cup diced bell peppers red, yellow, or green
  • 1/2 cup chopped green onions
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Method
 

  1. Cook the elbow macaroni in salted boiling water until al dente. Drain and let it cool.
  2. In a large bowl, whisk together mayonnaise, sour cream, and Dijon mustard until smooth.
  3. Once the macaroni is cooled, add celery, bell peppers, and green onions to the bowl. Stir gently until everything is evenly coated.
  4. Season with salt and pepper to taste. Mix again until well combined.
  5. Cover and chill in the refrigerator for at least one hour before serving.
  6. Garnish with chopped parsley before serving.
