  • 1.5 ounces Pecorino Romano cheese not pre-grated
  • 1 pound dried fettuccine pasta
  • 4 tablespoons unsalted butter 1/2 stick
  • 2 cups heavy cream
  • 2 cloves garlic finely grated or minced
  • 0.75 teaspoon kosher salt plus more as needed
  • 0.25 teaspoon freshly grated nutmeg
  • 0.25 teaspoon freshly ground black pepper
  • coarsely chopped parsley leaves for garnish (optional)

  • Large pot
  • skillet
  • Measuring cups
  • Measuring spoons
  • Grater

Method

  1. Bring a large pot of heavily salted water to a boil. Meanwhile, finely grate the Parmesan cheese and Pecorino Romano cheese.
  2. Add the fettuccine to the boiling water. Cook according to package directions until al dente, about 8 to 10 minutes. Reserve 3/4 cup of the pasta water, then drain the pasta.
  3. Melt the butter in a large skillet over medium heat. Stir in the cheeses, heavy cream, grated garlic, salt, nutmeg, and black pepper. Simmer until the sauce thickens and turns glossy, about 3 to 5 minutes.
  4. Add the pasta and 1/4 cup of the reserved pasta water and toss to coat. Add more pasta water, one tablespoon at a time, if needed for a saucy consistency. Taste and season with salt as needed. Garnish with parsley and more Parmesan if desired.
