Ingredients
  

Rice and Seasoning
  • 1 cup long-grain white rice rinsed
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup fresh cilantro chopped
  • 1 tablespoon lime juice freshly squeezed

Method
 

Cooking the Rice
  1. In a medium saucepan, combine the rinsed rice, water, salt, and olive oil. Bring to a boil over high heat.
  2. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes.
Finishing Touches
  1. Fluff the rice with a fork and stir in the chopped cilantro and lime juice.
  2. Serve warm as a side dish.
