  • 1 cup fresh cilantro leaves packed
  • 1/4 cup lime juice freshly squeezed
  • 1/2 cup olive oil
  • 1 clove garlic minced
  • 1 teaspoon honey or agave syrup for vegan option
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Make the Dressing
  1. In a blender, combine the cilantro leaves, lime juice, olive oil, garlic, honey, salt, and black pepper.
  2. Blend until smooth and well combined.
  3. Taste and adjust seasoning if necessary.
  4. Transfer to a mixing bowl or jar and refrigerate until ready to use.
