Ingredients
  

Base Ingredients
  • 1 cup dried apricots chopped
  • 1 cup rolled oats old-fashioned
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup cocoa powder unsweetened
  • 1/2 cup dark chocolate chips melted
  • 1/4 cup shredded coconut for rolling

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine chopped dried apricots, rolled oats, almond butter, honey, and cocoa powder.
  2. Mix until all ingredients are well combined.
  3. Fold in the melted dark chocolate chips until evenly distributed.
Form the Balls
  1. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  2. Roll each ball in shredded coconut to coat.
Chill and Serve
  1. Place the chocolate apricot balls on a baking sheet lined with parchment paper.
  2. Refrigerate for at least 30 minutes to firm up before serving.
