  • 2 cups fresh corn kernels about 3 ears or 12 oz frozen
  • 1/2 cup red onion finely diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped
  • 2-3 chipotle peppers in adobo sauce minced (adjust for heat preference)
  • Juice of 1 lime
  • Salt to taste

Method
 

  1. Prepare your ingredients: Shuck fresh corn or thaw frozen kernels. Finely dice the red onion.
  2. Optional: Preheat a skillet over medium-high heat and lightly char the corn until golden brown for added flavor.
