Ingredients
  

Salad Base
  • 2 cups shredded cooked chicken can use rotisserie chicken
  • 4 cups mixed salad greens such as romaine, spinach, and cabbage
  • 1 cup shredded carrots
  • 1 cup cucumber sliced or diced
  • 1 cup red bell pepper sliced
  • 1/2 cup green onions sliced
  • 1/4 cup slivered almonds for garnish
Dressing
  • 1/4 cup soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 1 teaspoon sesame seeds for garnish

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the shredded chicken, salad greens, carrots, cucumber, red bell pepper, and green onions.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic until well combined.
Combine and Serve
  1. Pour the dressing over the salad and toss to coat evenly.
  2. Garnish with slivered almonds and sesame seeds before serving.
