Ingredients
  

  • 1 pound boneless skinless chicken breasts, thinly sliced
  • 3 cups green cabbage chopped
  • 1 large carrot sliced into matchsticks
  • 2-3 cloves garlic minced
  • 1 inch fresh ginger grated
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons cooking oil vegetable or sesame

Method
 

  1. Prepare ingredients by slicing chicken, chopping cabbage and carrot, mincing garlic, and grating ginger.
  2. In a small bowl, whisk together soy sauce, rice vinegar, honey, minced garlic, and grated ginger to create the sauce.
  3. Heat oil in a large skillet or wok over medium-high heat. Add chicken strips and sauté until golden brown and cooked through (about 5 minutes).
  4. Add carrots and cabbage; stir-fry until cabbage wilts slightly (about 3 minutes).
  5. Pour the sauce over the stir-fry and toss everything together until well coated; cook for an additional 2 minutes.
  6. Serve hot with steamed rice or noodles.
